OUR MUSHROOMS

...are grown fresh year-round indoor in climate controlled growing rooms at our farm in beautiful Gonzales, Texas. After harvest, the mushrooms take a conveyor ride from the growing rooms directly into the packing facility. This eliminates excessive handling and expedites cooling, which means fresher mushrooms on your plate! This system, paired with the dedication and pride of our Kitchen Pride Growers, you can see quality is no accident!

WHITE BUTTON

BABY BELLAS

Scientific Name: AGARICUS BISPORUS

​

Probably the most popular among foodies, button mushrooms are known for being juicy and tasty, inexpensive and with a flavor that’s only “mildly mushroomy”. 

​

These mushrooms have a more delicate flavor than the mature mushrooms. When the mushroom matures the veil will open or separate under the cap. Mature whites, with open veils and darkened caps, develop a richer, deeper taste. 

Scientific Name: AGARICUS BISPORUS

​

Similar in appearance to the Whites because it comes from the same family (Agaricus). Look for a naturally light tan to rich brown cap and a very firm texture.

 

Deeper, denser, earthier flavor than white mushrooms, also known as “browns” or “criminis”, the baby bellas are simply portabellas that are harvested before they are completely mature.

PORTABELLAS

Scientific Name: AGARICUS BISPORUS

Impressive in size and appearance, the Portabella is a larger, hardier relative of the White and can range up to 6 inches in diameter. A longer growing cycle than Whites and Criminis results in a deep, meat-like texture and flavor.

 

Portabella’s are recognizable by their large caps and when cooked, their texture is hearty yet buttery. Many say a grilled portabella mushroom tastes a lot like a steak! 

SHIITAKES

Scientific Name: LENTINULA EDODES

​

Earthy and woodsy, shiitakes have a low water content, so the flavor is concentrated. They range in color from tan to dark brown with broad, umbrella-shaped caps, wide open veils and tan gills.

 

The caps have a soft, spongy texture. Very versatile, shiitake mushrooms go with everything, from seafood to vegetables to red meat. When cooked, they're rich and woodsy. And PACKED with antioxidants!

OYSTERS

Scientific Name: PLEUROTUS OSTREATUS

Fluted and graceful, Oyster mushrooms range in color from soft browns and greys to bright yellows, blues, and pinks.

 

These mushrooms have a mild, almost nutty taste. They look very similar to a cluster of oysters in the ocean, hence the name!
